Cargill using AI to get extra meat from beef carcasses. Its machine vision tool (“CarVe”) spots “red pixels” in images which are tiny flecks of meat. The tool recovers 0.5% more meat from each animal, equal to 55 million pounds of meat a year (~$200m worth). Particularly useful as beef prices are up 17% YoY as cattle herds have dropped to lowest levels in 75 years.
