Stablecoin ratings can only work with real-time, verifiable data for reserves and collateral, otherwise it's 2008 credit ratings again.
@chainlink PoR solves most of it, but can't ensure the quality of the data it's fed. @HyveXYZ will tackle this part of the stack and @arbitrum will see this first.

who is building risk ratings for stablecoins?
something simple, like bond ratings
with 204 stablecoins today and probably 1,000 by 2030
this feels necessary
