A Qiandao (Chinese for Thousand Island) Lake company called Sturgeon Dragon Tech (brand Kaluga Queen, yes the one Michelin chefs love) is about to IPO in Hong Kong. They’ve spent twenty years farming sturgeon in freshwater and now produce roughly a third of the world’s caviar supply (the largest!!) — and apparently supply their high-quality caviar to 21 of the 26 three-Michelin-starred restaurants in Paris. Or so Google AI tells me.
Their IPO story (they've failed to do so a few times before lol) is that they're gonna expand into more high-end Western foods. So yeah, that spoonful of “Russian luxury” on your blini (AI had to help me with this reference, I'm not bougie enough, but it's a fancy pancake) might soon be joined by “Made in Zhejiang” truffles or foie gras, lol.
