To understand why, we have to go back in time.
History
You see, pork used to look more like that on the left. Red, marbled, juicy, fatty, tasty. Then industrial pork production started, and big meat packers began demanding uniformity of pig, and big meat producers began demanding GROWTH and LOW FAT. Together those resulted in the tasteless and dry pork chops we've all grown accustomed to.
Mangalitsa
Our herd's genetics are untainted by this trend. Our Mangalitsa pigs are direct descendants of the original herd of the Royal Habsburgs, and so they are still juicy, red, full of flavor and umami, because we optimized for two things: animal welfare, and flavor! If you'd like to learn more, you can visit our website (linked below). Our pigs are raised outdoors on our farm in Iowa and we consider it the best tasting pork in the world.
